Join us for an evening to celebrate Dame Nellie’s birthday, with foods named in her honour and music to match from the Melba Opera Trust artists.

There will be performances by the Melba Artists during the course of the five course dinner.

Dame Nellie Melba was a regular at the Savoy Hotel, London. Auguste Escoffier, the legendary chef from the Savoy , invented and named the light accompaniment of dry thinly sliced bread after her (Melba Toast) when Melba was ill in 1897. Escoffier also created the Peach Melba, Melba Sauce and Melba Garniture in her Honour.

We would love the evening to reflect the style and glamour of Dame Nellie, why not dust off the finery in honour of the fashionista icon?

The Menu…

Canapes
Victorian style 

Melba Toast
with pâté, a dry, crisp, thinly sliced rusk that became a staple of Melba’s diet when she was ill in 1897.

Melba Garniture
Chicken, truffles and mushrooms stuffed into tomatoes with velouté.  

Peach Melba
A sweet purée of raspberries served with peaches and vanilla ice cream.

Tea & Coffee

Champagne will be served during the meal, a selection of wine will be avaible at the BMI Bar for purchase.

Melba Opera Trust 

The Trust was established in 2008 to provide scholarships to develop Australia’s most promising young opera singers and repetiteurs.

With the closure of Melba Memorial Conservatorium of Music at the end of 2008, Melba Opera Trust carries forward Dame Nellie Melba’s bequest and her final wish that her gift establish a scholarship “…so that another Melba may arise”.

The Trust ensures that young Australian opera singers and repetiteurs with exceptional promise are supported financially during a crucial phase of their development, namely postgraduate training as the bridge to becoming polished professionals on the opera world stage (source Melba Opera Trust website).

Tickets – $169.63 per person includes gst & booking fee | Tables of 8/6 can be placed together subject to availability.

Tickets can also be purchased in the Library.
